Cascara, which means skin or peel in Spanish, is a tea made from the dried fruit of the coffee cherry. Typically, this skin is composted as a byproduct of coffee processing, but done right it makes for a delicious tea! In the first step of the washed coffee process, recently harvested coffee cherries are de-pulped to remove the seed (the coffee “bean”) from the fruit. For our Cascara, the pulp is then collected, washed and then laid out to dry on raised beds.
Our coffee cherry tea is hand-selected from perfectly-ripe coffee cherries by Gold Mountain Coffee Growers, our hard-working direct-trade partner in Nicaragua. Their team at origin sorts through microlots of 100% red pacamara to remove impurities and defects, an undertaking that results in an incredibly sweet and clean brew.
Each bag contains 3 ounces (85 grams) of loose-leaf, delicious direct-trade specialty coffee cherry tea. We recommend steeping in 200 degree water for 5-8 minutes. Try starting with a 1:15 dry tea to water ratio and adjust based on preference!
